  • 1 pound kielbasa, sliced thin
  • 1/2 medium head green cabbage, sliced into ribbons (about 4 cups)
  • 1 pound potatoes, any variety, peeled and chopped into 1/2-inch pieces
  • 1 small onion, chopped into 1/2-inch pieces
  • 3 cloves garlic, minced
  • 1 tablespoon refined coconut oil or light olive oil
  • 1/2–1 teaspoon kosher salt, adjust to taste
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons water

Instructions

  1. Peel and chop potatoes into 1/2-inch pieces. Place in a medium glass bowl, season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Microwave for 4 minutes, stir, then microwave for an additional 2-4 minutes until fork-tender.
  2. Heat a large skillet over medium-high heat. Add coconut oil or olive oil. Once shimmering, add onions and sauté until barely tender and lightly browned. Add garlic and kielbasa, cooking for about 3 minutes until kielbasa browns.
  3. Add cooked potatoes to skillet with kielbasa mixture. Toss to coat, adding more oil if necessary. Spread evenly and cook undisturbed for 2-3 minutes to brown slightly.
  4. Add cabbage to skillet, sprinkle with remaining salt and pepper. Toss to combine. Pour water over mixture, reduce heat to medium-low, cover, and cook for 2 minutes until cabbage wilts.
  5. Adjust seasoning if needed. Serve hot from skillet.
