2–3 medium potatoes, peeled and cut into quarters
1 large or 2 small chicken breasts, skin-on
3 tsp vegetable, olive, or rapeseed oil
3 medium carrots, peeled and cut into batons
100g frozen peas
Gravy, to serve
Instructions
Soak potatoes in water for 30 minutes. Drain and rinse thoroughly. Preheat the air fryer for 2 minutes at 190°C (375°F). Dry potatoes, coat them with 1 tsp of oil, and season with salt and pepper. Cook potatoes in the air fryer for 10 minutes until golden and crispy.
Coat chicken breasts with 1 tsp of oil, season as desired. Add chicken to the air fryer basket with the potatoes and cook for 10 minutes until chicken is cooked through and juices run clear.
Coat carrots with the remaining oil and add to the air fryer with the chicken and potatoes. Continue cooking for 10-15 minutes until carrots are tender and slightly caramelized.
Place frozen peas in a small dish, add a bit of water, and cook in the air fryer for 10 minutes until heated through.
Serve the crispy potatoes, juicy chicken, tender carrots, and warm peas with gravy on the side.
