This hearty, creamy Cajun Chicken One-Pot meal is packed with flavor and easy to clean up. Tender chicken breasts are cooked with garlic, Cajun seasoning, and cherry tomatoes, then combined with pasta and a rich double cream sauce, finished with Parmesan cheese and fresh parsley.

Ingredients

  • 1 pound chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1 cup chicken stock
  • 1 cup cherry tomatoes, halved
  • 1/2 cup double cream
  • 2 cups pasta (penne or similar)
  • 1/4 cup Parmesan cheese, grated
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add chicken breasts and cook until browned on both sides and cooked through. Remove chicken from the pot and set aside.
  2. In the same pot, add minced garlic and Cajun seasoning. Cook for about 1 minute, stirring frequently, until fragrant.
  3. Pour in the chicken stock and add cherry tomatoes. Bring to a simmer.
  4. Stir in the pasta and cook according to package instructions until al dente.
  5. Reduce heat to low. Return the chicken to the pot and stir in the double cream. Simmer until the sauce thickens and the pasta is well coated.
  6. Sprinkle grated Parmesan cheese, lemon juice, and chopped fresh parsley over the dish. Stir to combine and melt the cheese.
  7. Serve warm, garnished with additional parsley if desired.
