This Beef Mushroom Greens Stir-Fry is a quick and delicious dish that combines tender beef, earthy mushrooms, and vibrant spring greens, all tossed in a savory sauce. Perfect for a weeknight dinner, it can be served over rice or noodles for a satisfying meal.

  • 12 tbsp vegetable oil
  • 4 tbsp oyster sauce
  • 150g chestnut mushrooms, sliced
  • 400g beef rump steak, thinly sliced
  • 300g spring greens, sliced
  • 2 tbsp dark soy sauce
  • Finger-tip length chunk fresh root ginger, chopped

Instructions

  1. Mix the oyster sauce and dark soy sauce together in a bowl and set aside.
  2. Heat a wok until smoking hot, add 1 tsp oil, and stir-fry the beef until browned all over. Remove the beef and set aside.
  3. Wipe the wok clean, add a bit more oil, and stir-fry the chopped ginger until golden and fragrant.
  4. Add the sliced spring greens and chestnut mushrooms to the wok. Stir-fry for about 3 minutes until they begin to soften.
  5. Return the beef to the wok along with the prepared sauce mixture. Stir-fry for an additional 3-4 minutes until the sauce has thickened slightly.
  6. Serve the stir-fry over rice or noodles.
