6 taco-sized flour tortillas
1 pound ground beef
2 cups Mexican shredded cheese blend
¾ cup Pico de Gallo
1 cup tomato, chopped
1 tablespoon lime juice
2 tablespoons onion, finely chopped
½ jalapeno, seeded and chopped
¼ teaspoon salt
1 tablespoon chopped cilantro
Instructions
Prepare the Pico de Gallo: In a bowl, mix together the chopped tomato, onion, lime juice, salt, cilantro, and chopped jalapeno. Stir well and refrigerate until ready to use.
Cook the Ground Beef: In a large skillet over medium heat, brown the ground beef, breaking it into small pieces. Drain any excess fat. Add the taco seasoning and water as per package instructions. Stir and simmer until the sauce thickens, about 5 minutes.
Warm the Tortillas: Warm the flour tortillas in the microwave for about 20 seconds until they are pliable.
Assemble the Meximelts: Lay out each tortilla and add a generous amount of shredded cheese, cooked ground beef, and Pico de Gallo. Fold in the sides and roll up each tortilla like a burrito.
Heat the Meximelts: Wrap each Meximelt in a damp paper towel and microwave for 20 seconds to melt the cheese and warm the filling.
