  • 1 cup BBQ sauce
  • 2 lbs frozen meatballs
  • 1/2 cup brown sugar
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1 can (20 oz) pineapple chunks, drained
  • 2 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Cooked white rice (for serving)
  • Green onions, chopped (for garnish)

Instructions

  1. In a medium bowl, whisk together BBQ sauce, pineapple juice, soy sauce, brown sugar, and minced garlic until well combined.
  2. Place the frozen meatballs in the bottom of the crockpot. Add the chopped red and green bell peppers and the pineapple chunks on top.
  3. Pour the prepared sauce over the meatballs and vegetables. Cover and cook on low for 4-6 hours or on high for 2-3 hours.
  4. About 30 minutes before serving, mix the cornstarch and water in a small bowl to create a slurry. Stir the slurry into the crockpot to thicken the sauce.
  5. Serve the Hawaiian meatballs over cooked white rice and garnish with chopped green onions.
