Butter, for greasing the tin
1 sheet ready-rolled shortcrust pastry
575ml whole milk
3 tbsp custard powder
3 tbsp caster sugar
1 tsp vanilla extract
3 tbsp raspberry jam
5 tbsp desiccated coconut
Handful of raspberries, to decorate
Instructions
Preheat oven to 200°C (180°C fan, gas mark 6) and grease a 22cm round loose-bottomed tart tin with butter.
Line the tart tin with the ready-rolled shortcrust pastry and trim the excess pastry from the edges.
Prick the base of the pastry with a fork, cover with baking parchment, fill with baking beans (or rice), and bake for 20 minutes.
Remove the beans and parchment, then bake for an additional 5 minutes until golden brown. Cool completely.
In a medium pan, combine whole milk, custard powder, caster sugar, and vanilla extract. Stir continuously over medium heat until smooth and thickened, about 5-10 minutes. Cool slightly and cover with cling film to prevent a skin from forming. Cool completely.
Spread raspberry jam evenly over the cooled pastry base and pour the cooled custard over the jam layer, spreading evenly.
Sprinkle desiccated coconut over the custard layer and decorate with fresh raspberries on top.
Chill the tart in the refrigerator for at least 1 hour to set the custard before slicing and serving.
