  • 1 tablespoon olive oil
  • 4 boneless pork chops
  • 1/4 cup brown sugar
  • 1 can (8 ounces) pineapple slices, drained (reserve juice)
  • 1 teaspoon grated ginger
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon cornstarch
  • 2 tablespoons water
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Sprinkle both sides of the pork chops with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the pork chops and cook until browned on both sides, about 3-4 minutes per side. Remove from the skillet and set aside.
  3. In the same skillet, add pineapple slices and cook until lightly caramelized, about 1-2 minutes per side. Remove from the skillet and set aside.
  4. In a small bowl, whisk together brown sugar, soy sauce, minced garlic, grated ginger, and 1/4 cup of the reserved pineapple juice.
  5. Pour the brown sugar mixture into the skillet and bring to a simmer.
  6. Return the pork chops and pineapple slices to the skillet, coating them with the sauce. Cook for 5-7 minutes, or until the pork chops are cooked through and the sauce has thickened.
  7. In a separate small bowl, mix cornstarch with water to create a slurry. Stir the slurry into the skillet to further thicken the sauce, if desired.
  8. Garnish with chopped fresh parsley before serving, if desired.
