4 salmon fillets
1/2 cup pineapple chunks
2 tbsp jalapeños, sliced
1/4 cup honey
1/4 cup soy sauce
2 tbsp lime juice
2 cloves garlic, minced
1 tsp ginger, minced
2 tbsp olive oil
Salt and pepper to taste
Green onions, chopped (for garnish)
Instructions
Whisk together honey, soy sauce, lime juice, minced garlic, and minced ginger in a bowl to prepare the marinade.
Place salmon fillets in a shallow dish or resealable bag. Pour marinade over salmon, ensuring each fillet is coated. Refrigerate for at least 30 minutes.
Heat olive oil in a large skillet over medium-high heat. Remove salmon from marinade, season with salt and pepper. Reserve marinade. Sear salmon fillets, skin side down, for 4-5 minutes per side until cooked through. Set aside.
In the same skillet, add reserved marinade. Bring to a simmer, cook for 2-3 minutes until slightly thickened.
Stir in pineapple chunks and sliced jalapeños. Cook for another 2 minutes until heated through.
Return cooked salmon to skillet, spoon sauce over fillets to coat in the sweet and spicy mixture.
Garnish with chopped green onions and serve hot with your favorite side dish.
