1 lb spaghetti
4 oz crumbled feta cheese
12 oz frozen spinach
1 tbsp red wine vinegar
3 tbsp extra virgin olive oil
½ tsp sea salt
1 tbsp lemon juice
2 tbsp fresh chopped basil
3 tbsp salted butter
1 tbsp dried oregano
½ red onion, diced
1 cup grape tomatoes, halved
2 tbsp fresh chopped dill
4 garlic cloves, divided
½ tsp fresh cracked pepper
Instructions
Bring a large pot of salted water to a boil. Add the spaghetti and cook for 12 minutes or until al dente. Drain and set aside.
In a food processor, combine 3 garlic cloves, basil, dill, oregano, salt, pepper, lemon juice, red wine vinegar, and olive oil. Pulse for 15-20 seconds until well blended.
In the same pot used for cooking the spaghetti, melt the butter over medium heat. Add the tomatoes, onion, and frozen spinach (break apart the spinach to speed up thawing). Cook for 7 minutes, then add the remaining garlic and stir.
Add the cooked spaghetti and sauce to the pot. Toss to coat the pasta evenly and cook for an additional 7-10 minutes, allowing the flavors to meld.
Top with crumbled feta cheese and a sprinkle of fresh dill. Serve hot.
