  • 1 cup Italian bread crumbs
  • 10 oz mozzarella string cheese (or 10 sticks)
  • 1/4 cup milk
  • 2 eggs
  • Cayenne pepper (optional)

Instructions

  1. On a cutting board, cut the mozzarella string cheese sticks into bite-sized pieces.
  2. In a medium bowl, whisk the eggs and then add the milk, whisking again to combine. Prepare two additional bowls: one with flour and the other with Italian bread crumbs. Place the egg mixture bowl between the flour and bread crumbs bowls.
  3. Dip each cheese piece into the flour, then the egg mixture, and finally roll it in the bread crumbs. Ensure each piece is well-coated. Place the coated cheese bites on a plate as you go.
  4. In a medium-sized skillet, heat vegetable oil to 350°F (about 2 inches deep). To test, place the handle of a wooden spoon in the oil; if bubbles form around the handle, it’s ready.
  5. Line a plate with paper towels. Fry 5-7 pieces at a time for about 30 seconds or until golden brown. Keep them separated to prevent sticking. Use a slotted spoon to transfer the fried cheese bites to the paper towel-lined plate.
  6. Serve immediately with pasta sauce or enjoy them on their own.
