1 cup shredded cheddar cheese
1 can (14.5 oz) diced tomatoes, drained
1 cup milk
1 lb ground beef
8 oz macaroni pasta
1 packet taco seasoning
1 can (4 oz) green chiles (optional)
1 cup shredded mozzarella cheese
1 small onion, diced
2 cloves garlic, minced
Salt and pepper to taste
Fresh cilantro, for garnish
Instructions
Cook macaroni according to package instructions. Drain and set aside.
In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
Add diced onion and minced garlic to the skillet with the beef. Sauté until the onions are translucent.
Stir in taco seasoning, diced tomatoes, and green chiles (if using). Cook for 5 minutes.
Lower the heat and mix in the cooked macaroni, milk, and cheeses. Stir until the cheeses are melted and the mixture is well combined.
Season with salt and pepper to taste. Garnish with fresh cilantro before serving.
