2 cups 2% milk
1 cup grated Mozzarella cheese or 3-cheese blend
3 tablespoons minced garlic
1 pound peeled and deveined shrimp
4 ounces cream cheese
3 tablespoons butter
2 tablespoons flour
1/3 cup Parmesan cheese (optional)
1/2 teaspoon salt
Pepper to taste
Parsley for garnish
Instructions
In a bowl or using a hand mixer, blend the milk, cream cheese, flour, and salt until smooth. Set aside.
In a saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp to the pan and cook for 3-5 minutes, or until they turn pink and are just cooked through. Remove the shrimp and set aside, leaving the garlic and butter in the pan.
Pour the milk mixture into the same pan. Stir for 4 minutes on medium heat until it starts to simmer. Continue stirring for another 6 minutes, or until the sauce begins to thicken.
Remove the pan from heat and stir in the grated Mozzarella and Parmesan cheese (if using). Cover and let stand for about 5 minutes to allow the cheese to melt and the sauce to thicken.
Add the cooked shrimp back into the sauce and let it stand for an additional 5 minutes. Serve the shrimp Alfredo sauce over your choice of noodles (fettuccine is recommended). Garnish with dried parsley.
