Indulge in these delightful Profiterole & Salted Toffee Ice Cream Sandwiches, where crispy profiteroles meet creamy vanilla ice cream, all drizzled with luscious salted toffee sauce and topped with your favorite treats.

  • 75g diced butter for profiteroles
  • 100g plain flour for profiteroles
  • 3 eggs for profiteroles
  • 50g butter for salted toffee sauce
  • 60g demerara sugar for salted toffee sauce
  • 2 tsp golden syrup for salted toffee sauce
  • 2 tsp treacle for salted toffee sauce
  • 160ml double cream for salted toffee sauce
  • Pinch of sea salt flakes for salted toffee sauce
  • Vanilla ice cream, scooped into 8 balls and refrozen
  • Toppings of choice: honeycomb, toasted hazelnuts or almonds, salted pretzels, hundreds and thousands, Crunchies, Maltesers, or Oreos

Instructions

  1. Preheat your oven to 200°C (180°C fan) or 400°F. Line a baking sheet with parchment paper. In a saucepan, bring 75g diced butter and 200ml water to a boil. Remove from heat and stir in 100g plain flour until it forms a ball. Let cool slightly, then beat in the eggs one at a time until smooth. Spoon or pipe small mounds onto the baking sheet. Bake for 20-25 minutes until golden brown. Cool completely.
  2. In a saucepan, melt 50g butter with 60g demerara sugar, 2 tsp golden syrup, and 2 tsp treacle until combined. Add 160ml double cream, bring to a boil, then simmer for 3-4 minutes until slightly thickened. Stir in a pinch of sea salt flakes. Let cool.
  3. Slice the profiteroles horizontally. Place a ball of refrozen vanilla ice cream in each. Drizzle with salted toffee sauce.
  4. Sprinkle with honeycomb, toasted nuts, salted pretzels, or your preferred toppings.
  5. Enjoy immediately to savor the crunchy, creamy, and sweet flavors!
