  • 2 pounds ribeye steak (trimmed and sliced very thin)

  • 1 large yellow onion (chopped)
  • 2 tablespoons vegetable oil (divided)
  • 8 slices mild provolone cheese
  • 4 hoagie rolls (sliced 3/4 way through)
  • 4 tablespoons salted butter (softened)
  • 1 garlic clove (finely minced)
  • 24 tablespoons mayonnaise

Instructions

  1. Freeze the ribeye steak for about 30 minutes for easier slicing. Thinly slice and season with salt and pepper.
  2. Chop the onion and set aside. Slice hoagie rolls lengthwise.
  3. In a bowl, mix softened butter with minced garlic; spread on hoagie rolls and toast on a griddle until golden brown.
  4. Sauté onions in one tablespoon of oil over medium heat until caramelized, then set aside.
  5. Increase heat to medium-high, add another tablespoon of oil, and cook the sliced steak for about 2-3 minutes per side until done. Mix in sautéed onions.
  6. Separate meat mixture into portions in the pan, topping each with provolone cheese until melted.
  7. Spread mayonnaise on toasted rolls, assemble the cheesesteak, and serve immediately while hot.
