- 2 pounds ribeye steak (trimmed and sliced very thin)
- 2 teaspoons coarse Kosher salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 1 large yellow onion (chopped)
- 2 tablespoons vegetable oil (divided)
- 8 slices mild provolone cheese
- 4 hoagie rolls (sliced 3/4 way through)
- 4 tablespoons salted butter (softened)
- 1 garlic clove (finely minced)
- 2–4 tablespoons mayonnaise
Instructions
- Freeze the ribeye steak for about 30 minutes for easier slicing. Thinly slice and season with salt and pepper.
- Chop the onion and set aside. Slice hoagie rolls lengthwise.
- In a bowl, mix softened butter with minced garlic; spread on hoagie rolls and toast on a griddle until golden brown.
- Sauté onions in one tablespoon of oil over medium heat until caramelized, then set aside.
- Increase heat to medium-high, add another tablespoon of oil, and cook the sliced steak for about 2-3 minutes per side until done. Mix in sautéed onions.
- Separate meat mixture into portions in the pan, topping each with provolone cheese until melted.
- Spread mayonnaise on toasted rolls, assemble the cheesesteak, and serve immediately while hot.
