  • 2 large eggs
  • 2 tablespoons whole milk
  • ¾ cup all-purpose flour
  • 2 tablespoons cornstarch
  • 12 string cheese sticks (cut in half)
  • ¾ cup plain bread crumbs
  • ¾ cup plain panko bread crumbs
  • 1 ½ tablespoons Italian seasoning
  • 2 teaspoons onion powder
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon smoked paprika
  • 4 cups vegetable oil for frying

Instructions

  1. In a small mixing bowl, beat 2 large eggs with 2 tablespoons of whole milk until well combined. Set aside.
  2. In a pie plate or shallow bowl, whisk together ¾ cup all-purpose flour and 2 tablespoons cornstarch. Set aside.
  3. In another pie plate or shallow bowl, mix ¾ cup plain bread crumbs, ¾ cup plain panko bread crumbs, 1 ½ tablespoons Italian seasoning, 2 teaspoons onion powder, ½ teaspoon kosher salt, ½ teaspoon black pepper, and ¼ teaspoon smoked paprika. Set aside.
  4. Add 4 cups vegetable oil to a 3 to 4-quart heavy-bottomed saucepan and heat over medium-high until the oil reaches 350°F.
  5. Dredge each halved cheese stick first in the egg wash, then in the flour mixture, back in the egg wash, and finally in the bread crumb mixture. Ensure each stick is well coated.
  6. Once the oil is at 350°F, carefully place 4-5 coated cheese sticks in the oil using tongs. Fry for 30 seconds to 1 minute, turning as needed, until golden brown. Adjust the stovetop temperature to maintain the oil temperature.
  7. Remove the cheese sticks from the oil and place them on paper towels to drain excess oil. Serve hot with marinara sauce or your favorite dipping sauce.
