Ingredients

Scale
  • 1 tbsp butter, softened
  • 150g sirloin or rump steak, at room temperature, excess fat trimmed
  • 1 tsp Dijon mustard
  • 1 large potato (200g), cut into chunky chips or wedges
  • About 8 cherry tomatoes on the vine
  • 1 tsp finely chopped capers
  • 2 tsp vegetable oil
  • 1 small courgette, diced or cut into long strips approx ½ cm wide

Instructions

  1. Preheat the oven to 200°C (180°C fan, gas mark 6). Toss the chunky chips or wedges in 1 tsp of vegetable oil on a baking tray. Season with salt and pepper. Bake for 30-35 minutes, turning halfway through, until golden and crispy.
  2. In a small bowl, mix together the softened butter, Dijon mustard, and finely chopped capers. Set aside.
  3. Heat a non-stick frying pan over medium-high heat. Rub the steak with the remaining 1 tsp of vegetable oil and season generously with salt and pepper. Cook the steak for 2-3 minutes on each side (for medium-rare), or until done to your liking. Remove from the pan and let it rest for a few minutes.
  4. In the same pan used for the steak, add the diced courgette and cherry tomatoes on the vine. Cook for 3-4 minutes, stirring occasionally, until the courgette is tender and the tomatoes are slightly blistered.
  5. Place the cooked steak on a plate. Top with a generous dollop of the mustard caper butter. Arrange the roasted chunky chips or wedges alongside the steak. Serve with the sautéed courgette and blistered cherry tomatoes.
