This Slow Cooker Sunday Roast Chicken is a comforting and flavorful meal, perfect for a lazy Sunday. The tender chicken is seasoned and stuffed with aromatic herbs and garlic, while the vegetables soak up all the delicious flavors during the slow cooking process.

  • 4 potatoes, peeled and quartered
  • 2 sprigs of fresh rosemary
  • 2 onions, peeled and quartered
  • Salt and pepper, to taste
  • 2 sprigs of fresh thyme
  • 1 lemon, halved
  • 3 garlic cloves, minced
  • 250ml chicken broth
  • 1 whole chicken (about 1.5kg)
  • 4 carrots, peeled and cut into large chunks

Instructions

  1. Generously season the whole chicken with salt and pepper, both inside and out.
  2. Place the onion quarters, carrot chunks, and potato quarters at the bottom of your slow cooker.
  3. Stuff the chicken cavity with minced garlic, lemon halves, rosemary, and thyme sprigs.
  4. Place the seasoned chicken on top of the vegetables in the slow cooker. Pour the chicken broth over the vegetables and around the chicken.
  5. Cover the slow cooker with its lid and cook on low for 6-8 hours, or until the chicken is tender and fully cooked (internal temperature should reach 75°C).
  6. Once cooked, carefully remove the chicken from the slow cooker and place it on a cutting board to rest for a few minutes before carving. Serve the roast chicken with the cooked vegetables and some of the cooking juices drizzled over the top.
