3 cups mashed potatoes
2 eggs
1/3 cup sour cream
1 heaping cup shredded sharp cheddar cheese
2 tablespoons grated Parmesan cheese
2 tablespoons chopped chives or parsley
Salt and black pepper, to taste
Instructions
Preheat oven to 400°F (200°C).
Lightly grease 8-9 wells of a nonstick muffin pan with butter.
In a medium mixing bowl, whisk the eggs. Add the sour cream and mix well.
Stir in the shredded cheddar cheese, grated Parmesan cheese, and chopped chives or parsley into the egg mixture.
Add the mashed potatoes to the bowl and mix everything together until well combined.
Spoon the potato mixture into the prepared muffin pan, filling each cup slightly below the top.
Bake in the preheated oven for 25-35 minutes, or until the potato puffs pull away from the sides of the cups and are golden brown.
Remove from the oven and let them cool in the pan for 5 minutes. Serve warm with extra sour cream if desired.
