  • 4 cups all-purpose flour
  • 1/4 cup warm water
  • 1 1/4 cups warm milk
  • 2 tablespoons melted butter
  • 2 1/4 teaspoons active dry yeast
  • 2 teaspoons sugar
  • 1 1/2 teaspoons salt
  • Cornmeal, for dusting

Instructions

  1. In a small bowl, combine the yeast, sugar, and warm water. Let sit for 10 minutes until frothy.
  2. In a large mixing bowl, whisk together the flour and salt. Make a well in the center and pour in the yeast mixture, warm milk, and melted butter. Mix until combined into a dough.
  3. Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm place for 1-2 hours, or until doubled in size.
  5. Punch down the dough and roll it out on a lightly floured surface to about 1/2 inch thickness. Use a round cutter to cut out circles and dust them with cornmeal.
  6. Heat a griddle or large skillet over medium heat. Cook the muffins for 7-10 minutes on each side, or until golden brown and cooked through.
