Instructions

  1. Chill the butter in the freezer for about 10 minutes and dice into 1/3-inch cubes.
  2. In a large bowl, whisk together the flour, sugar, and salt.
  3. Cut the chilled butter into the flour mixture until it resembles coarse crumbs.
  4. Gradually add the ice water, mixing gently after each addition until a loose dough forms.
  5. Flatten the dough into disks, wrap in plastic wrap, and refrigerate for at least 2 hours.
  6. Roll the dough into a 12-13 inch circle on a floured surface.
  7. Transfer the dough to the pie pan and press evenly into the bottom and sides.
  8. Trim the dough to a 1-inch overhang and crimp the edges.
  9. Poke holes in the bottom of the crust and refrigerate or freeze until well-chilled.
  10. Preheat the oven to 375°F (190°C) and blind bake the crust for 20-30 minutes.
