  • 1 ¾ cups semisweet chocolate chips (300g), plus extra for topping if desired
  • 1 cup unsalted butter, melted and cooled (226g)
  • 1 ¼ cups tightly packed brown sugar (250g)
  • ½ cup granulated sugar (100g)
  • 1 large egg
  • 1 egg yolk
  • 1 ½ teaspoon vanilla extract
  • 2 ¾ cups all-purpose flour (350g)
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ¾ teaspoon salt

Instructions

  1. In a large bowl, combine the melted butter with the brown sugar and granulated sugar. Stir until fully mixed. Add the egg, egg yolk, and vanilla extract. Stir until the mixture is smooth and creamy.
  2. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
  3. Gradually add the dry mixture to the wet ingredients, stirring well after each addition until all the flour is absorbed.
  4. Fold in the semisweet chocolate chips until evenly distributed throughout the dough.
  5. Cover the dough and refrigerate for at least 30 minutes to firm up.
  6. Preheat your oven to 350°F (177°C). Line baking sheets with parchment paper.
  7. Scoop the dough by rounded 1 ½ tablespoon portions onto the prepared baking sheets, spacing them at least 2 inches apart. Bake for 11 minutes, or until the edges are lightly golden and the centers are still slightly soft.
  8. Immediately after removing from the oven, gently press a few additional chocolate chips into the tops of the warm cookies.
  9. Allow the cookies to cool completely on the baking sheets before transferring them to a wire rack to cool further.
