Instructions

  1. Make the pie crust: In a mixing bowl, combine flour, salt, and sugar. Add chilled butter and shortening, using a pastry cutter or fork until crumbly. Stir in apple cider vinegar and gradually add ice water until dough forms. Divide into two balls, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Prepare the filling: Mix cubed mangoes and peaches in another bowl. Sprinkle with sugar and cornstarch, tossing gently to coat.
  3. Roll out dough: On a floured surface, roll one dough ball to about 1/8 inch thick. Cut into circles with a cookie cutter or small bowl.
