700g baby potatoes, halved
3 carrots, peeled and chopped
2 red onions, quartered
2 garlic cloves, minced
2 tbsp olive oil
2 tsp dried thyme
1 tsp dried oregano
Salt and pepper to taste
8 – 10 sausages
2 tbsp unsalted butter, melted
2.5 tbsp all-purpose flour
2 cups beef broth
Fresh thyme for garnish (optional)
Instructions
Preheat the oven to 200C/390F.
In a large bowl, combine the baby potatoes, carrots, red onions, garlic, olive oil, thyme, oregano, salt, and pepper. Toss well to coat.
Add the sausages to the bowl and toss briefly. Transfer the mixture into a roasting pan, arranging the sausages on top of the vegetables.
In the same bowl, add melted butter and flour. Whisk together, then gradually add beef broth while whisking until smooth. Pour the gravy mixture down the side of the pan, avoiding the sausages and vegetables.
Optionally, spray sausages with oil for better browning.
Bake for 25 minutes, then turn the sausages. Optionally spray again with oil and bake for an additional 25 minutes or until sausages are browned and potatoes are soft.
Serve sausages and vegetables with gravy on top, garnished with fresh thyme if desired.
