1 cup fresh blueberries
2 tablespoons granulated sugar
1 cup salted butter, softened
16 ounces cream cheese, softened
5 cups powdered sugar
1 teaspoon vanilla extract
Instructions
In a 2-quart saucepan, combine fresh blueberries and granulated sugar over medium heat. Use a potato masher to break down the blueberries, cooking for 8 to 10 minutes until they reduce to a thick jam-like paste. Remove from heat and let cool to room temperature. Refrigerate to speed up cooling.
In a large mixing bowl, beat softened cream cheese and butter until light and fluffy. Add vanilla extract and beat until well combined. Gradually beat in powdered sugar, one cup at a time, until frosting is thick and fluffy. Once the blueberry reduction has cooled, beat it into the frosting until well incorporated.
