  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 3 large eggs
  • 1 ¼ cup milk
  • 2 tablespoons melted butter
  • additional butter for cooking

Instructions

  1. In a small bowl, sift together the flour, sugar, and salt. Set aside.
  2. In a medium bowl, use a hand mixer to whisk the eggs for 4-5 minutes until they become lemon-yellow and slightly thickened. Whisk in the milk and melted butter until well combined.
  3. Gradually add the flour mixture to the egg mixture, ¼ cup at a time. Whisk until smooth and fully incorporated.
  4. Heat a skillet over medium heat and melt a small amount of butter. Pour about 2 tablespoons of batter into the skillet, adjusting for the size of your pancakes. Cook for approximately 2 minutes per side, or until golden brown.
  5. Remove from the skillet and serve immediately with lingonberry jam or your favorite toppings.
