Ingredients
Scale
1/2 cup unsalted butter, softened
3/4 cup creamy peanut butter
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
In a mixing bowl, cream together the softened butter, creamy peanut butter, granulated sugar, and brown sugar until smooth and creamy.
Beat in the egg and vanilla extract until well combined.
In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Roll the dough into tablespoon-sized balls and place them on the prepared baking sheets, leaving space between each cookie.
Gently flatten each cookie with a fork, creating a crisscross pattern on the top.
Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
