2 pounds chicken thighs, drumsticks, or breasts, cut into pieces
2 cups all-purpose flour
1 cup buttermilk
1 teaspoon garlic powder
1 teaspoon paprika
2 tablespoons za’atar spice blend
1 teaspoon salt, plus extra for seasoning
½ teaspoon black pepper, plus extra for seasoning
Vegetable oil, for frying
Instructions
Combine buttermilk and 1 tablespoon of za’atar spice blend in a bowl. Add chicken pieces, ensuring they are well-coated. Marinate for at least 1 hour, or overnight for the best flavor.
In a separate bowl, mix together flour, garlic powder, paprika, salt, black pepper, and the remaining tablespoon of za’atar spice blend.
Remove chicken from the marinade, letting any excess drip off. Coat each piece in the seasoned flour mixture, pressing to adhere. Shake off any excess flour.
Pour vegetable oil into a large skillet or Dutch oven, enough to cover the chicken. Heat over medium-high heat until it reaches 350°F (175°C).
Carefully add chicken pieces to the hot oil, working in batches if needed to prevent overcrowding. Fry for 6-8 minutes per side, or until golden brown and cooked through.
Remove chicken from the oil and drain on paper towels. Season with additional salt and pepper while still hot.
