Ingredients
Scale
1 large pineapple, peeled and cored
1 cup all-purpose flour
1/4 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1 large egg
3/4 cup milk
Vegetable oil for frying
Additional cinnamon and sugar for dusting
Instructions
Slice the pineapple into rings about 1/2-inch thick.
In a mixing bowl, combine flour, granulated sugar, baking powder, salt, and ground cinnamon. Add egg and milk to the dry ingredients and whisk until smooth.
Heat vegetable oil in a deep fryer or large pot to 375°F (190°C).
Dip each pineapple ring into the batter, ensuring it's coated. Carefully place battered pineapple rings into the hot oil in batches. Fry until golden brown, about 2 minutes per side. Use a slotted spoon to remove fritters from oil, draining excess on paper towels.
While warm, dust fritters generously with additional cinnamon and sugar mixture.
Serve pineapple fritters warm and savor the tropical flavors!
