These Strawberry Mango Margarita Cupcakes are a delightful treat that combines the refreshing flavors of strawberry and mango with a hint of tequila.   • 1 ½ cups whole milk
  • 1 ¼ cups caster sugar
  • 2 large eggs
  • 3 tsp baking powder
  • ½ cup vegetable oil
  • ½ tsp fine salt
  • 2 tbsp Greek yogurt or sour cream
  • ½ cup unsalted butter, softened
  • 1 tsp vanilla extract or vanilla bean paste
  • 1 tsp strawberry flavoring
  • 1 tsp mango flavoring
  • 2 tsp tequila (optional)
  • 4 drops pink food gel
  • 3 drops red food gel
  • 4 drops yellow food gel
  • 1 batch American buttercream or Swiss meringue buttercream frosting
  • 5 drops pink food gel
  • 3 drops red food gel
  • 5 drops yellow food gel
  • 1 tsp strawberry flavoring
  • 1 tsp mango flavoring
  • 1 cup granulated sugar
  • 10 limes, cut into 40 wedges
  • 10 strawberries, washed and halved

Instructions

  1. Preheat a fan-forced oven to 140°C (275°F) or a conventional oven to 160°C (320°F). Line two cupcake tins with cupcake liners.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Mix with a hand mixer until well combined.
  3. Add the softened butter and mix on low speed until the mixture reaches a crumbly, sand-like texture. Then, add the eggs, milk, oil, yogurt, tequila (if using), and vanilla. Mix on low speed until all the dry ingredients are incorporated. Scrape down the sides of the bowl and mix for an additional 20 seconds.
  4. Split the batter into two separate bowls. Add pink and red food gel to one bowl along with the strawberry flavoring and mix until well combined. Add yellow food gel and mango flavoring to the other bowl and mix.
  5. Transfer each batter into separate piping bags. Pipe yellow batter into the cupcake liners first, followed by swirls of the red batter on top.
  6. Bake for 40–50 minutes, or until a toothpick inserted in the middle of a cupcake comes out clean. Allow the cupcakes to cool completely on a wire rack before frosting.
  7. Divide the frosting into two bowls. Add pink and red food gel to one bowl along with the strawberry flavoring and mix until well combined. Add yellow food gel and mango flavoring to the other bowl and mix.
  8. Lightly brush the rim of each cooled cupcake with a bit of water. Roll the edges in granulated sugar to mimic the salted rim of a margarita glass. Fit a piping bag with an open star tip and pipe swirls of frosting on top of each cupcake.
  9. Garnish each cupcake with two lime wedges and a halved strawberry. Add a paper straw to complete the margarita illusion.
