1 cup buttermilk, at room temperature
1 tablespoon vanilla extract
3-ounce package strawberry gelatin
1/2 teaspoon salt
2 cups granulated sugar
1/2 cup butter
1/2 cup shortening
5 large eggs, at room temperature
2 1/2 teaspoons baking powder
3 cups all-purpose flour
Instructions
Sift together the flour, salt, and baking powder. Add the strawberry gelatin to the flour mixture and whisk to combine.
Preheat your oven to 325°F (163°C) and prepare a 10-inch bundt pan by greasing it with solid vegetable shortening and dusting with sugar or flour.
In the bowl of a stand mixer, cream together the shortening and butter until smooth. Add the granulated sugar and mix until fluffy.
Mix in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and mix well.
Add the flour mixture alternately with the buttermilk, starting and ending with the flour mixture.
