  • 8 ounces bacon
  • 0.5 pound ground beef
  • 1 (10 ounce) can diced tomatoes with green chile peppers
  • 1 (8 ounce) package cream cheese, cut into cubes
  • 1 (8 ounce) package shredded Cheddar-Monterey Jack cheese blend
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a large skillet, cook the bacon over medium-high heat until evenly browned, about 10 minutes. Transfer to a plate lined with paper towels, reserving the drippings in the skillet.
  2. Add ground beef to the skillet with the bacon drippings. Cook and stir until browned, about 5 to 7 minutes. Drain and return to low heat.
  3. Stir diced tomatoes with green chile peppers, cream cheese, and shredded cheese blend into the beef. Crumble most of the cooked bacon into the mixture, reserving some for garnish. Stir until the cheese begins to melt, about 2 to 3 minutes.
  4. Move the mixture to a slow cooker.
  5. Set the cooker on Low and cook until the dip is hot and bubbly, approximately 2 to 3 hours.
  6. Stir in chopped parsley and garnish with the reserved crumbled bacon. Serve the dip warm, keeping the slow cooker on Low.
