Quesabirria Tacos are a delicious fusion of tender, shredded beef and melted cheese, all wrapped in crispy corn tortillas. This savory dish is served with a rich consommé for dipping, making it a perfect meal for any taco lover.

  • 2 pounds beef chuck roast or brisket, cut into chunks
  • 1 onion, roughly chopped
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 tablespoon dried oregano
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cloves
  • Salt and pepper to taste
  • 2 cups beef broth
  • 2 cups water
  • 23 dried chili peppers (such as guajillo or ancho), stemmed and seeded
  • 1 cinnamon stick (optional)
  • Corn tortillas
  • Shredded mozzarella, Oaxaca, or Monterey Jack cheese
  • Chopped fresh cilantro
  • Diced onions
  • Lime wedges
  • Salsa or hot sauce (optional)

Instructions

  1. In a large pot or Dutch oven, combine the beef chunks, chopped onion, minced garlic, bay leaves, oregano, ground cumin, smoked paprika, ground cloves, salt, and pepper.
  2. Pour in the beef broth and water, ensuring the meat is submerged. Add the dried chili peppers and cinnamon stick.
  3. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 3-4 hours or until the beef is tender and easily shreds.
  4. Once cooked, remove the beef pieces from the pot and shred them using two forks. Set aside.
  5. Strain the broth and reserve it for dipping the tacos (consommé).
  6. Heat a skillet or griddle over medium heat. Lightly oil the surface.
  7. Take a corn tortilla and place it on the skillet. Sprinkle some shredded cheese on the tortilla.
  8. Add a portion of the shredded beef on one half of the tortilla. Fold the other half over the meat, creating a taco.
  9. Cook the taco on each side until the tortilla is crispy and the cheese melts, about 2-3 minutes per side.
  10. Repeat the process for the remaining tortillas and filling.
  11. Serve the Quesabirria Tacos hot with chopped cilantro, diced onions, lime wedges, and the reserved consommé for dipping. Optionally, offer salsa or hot sauce on the side.
