  • 1 cup all-purpose flour
  • 1/2 cup butter or margarine, softened
  • 3 oz cream cheese, softened
  • Dash of salt
  • 2 large eggs, beaten
  • 1 cup brown sugar
  • 2 tablespoons butter or margarine, melted
  • 1 teaspoon vanilla extract
  • Dash of salt
  • 1 cup pecans, chopped

Instructions

  1. In a mixing bowl, combine softened cream cheese, butter, flour, and a dash of salt. Blend until smooth. Shape the dough into 24 small balls and press each ball into the bottom and up the sides of 1¾-inch muffin tins.
  2. In a separate bowl, mix together beaten eggs, brown sugar, melted butter, vanilla extract, and a dash of salt. Stir until well combined.
  3. Place a small amount of chopped pecans into each pastry shell. Pour the filling mixture over the pecans, filling each shell about 2/3 full.
  4. Preheat your oven to 350°F (175°C). Bake the tarts for 20-25 minutes, or until the filling is set and the tops are lightly golden.
  5. Allow the tarts to cool slightly before removing them from the muffin tins. Transfer to a wire rack to cool completely.
