  • 1/2 cup granulated sugar
  • 1/4 cup granulated sugar (for topping)
  • 1/2 cup unsalted butter, room temperature
  • 1 teaspoon ground cinnamon
  • 1 large egg
  • 1/2 cup brown sugar, packed
  • 1/2 teaspoon baking soda

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat the room-temperature butter with granulated sugar and brown sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture, mixing until fully combined.
  5. Gradually blend the dry ingredients into the wet mixture, mixing until just combined.
  6. Gently fold the diced peaches into the cookie dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheet.
  8. In a small bowl, combine ground cinnamon with 1/4 cup granulated sugar. Sprinkle this mixture over the cookie dough.
  9. Bake for 12-15 minutes, or until the edges are golden brown.
  10. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
