  • ¼ cup Dijon mustard
  • ¼ cup mayonnaise
  • 1 teaspoon barbecue sauce
  • ½ teaspoon hot sauce
  • pounds ground beef
  • 1 teaspoon kosher salt
  • ½ teaspoon ground black pepper
  • 12 slices sourdough bread
  • ½ cup secret sauce
  • 3 Vidalia onions, thinly sliced
  • 6 slices Cheddar cheese
  • 8 teaspoons unsalted butter

Instructions

  1. In a bowl, mix together Dijon mustard, mayonnaise, barbecue sauce, and hot sauce. Store in the refrigerator for up to 3 days.
  2. In a medium cast iron skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook until tender and golden, about 35 minutes.
  3. Blend ground beef with salt and pepper. Shape into 6 oval patties. Cook the patties in a large skillet over medium-high heat until golden brown, about 2 minutes per side. Remove and set aside.
  4. Spread 1 tablespoon of secret sauce on one side of a slice of bread. Layer with caramelized onions, a slice of cheese, a patty, and another tablespoon of secret sauce. Top with another slice of bread. Repeat with remaining ingredients.
  5. Melt 1 teaspoon of butter in the skillet over medium heat. Cook the assembled sandwiches until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
  6. Serve warm.
