¼ cup Dijon mustard
¼ cup mayonnaise
1 teaspoon barbecue sauce
½ teaspoon hot sauce
1½ pounds ground beef
1 teaspoon kosher salt
½ teaspoon ground black pepper
12 slices sourdough bread
½ cup secret sauce
3 Vidalia onions, thinly sliced
6 slices Cheddar cheese
8 teaspoons unsalted butter
Instructions
In a bowl, mix together Dijon mustard, mayonnaise, barbecue sauce, and hot sauce. Store in the refrigerator for up to 3 days.
In a medium cast iron skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and cook until tender and golden, about 35 minutes.
Blend ground beef with salt and pepper. Shape into 6 oval patties. Cook the patties in a large skillet over medium-high heat until golden brown, about 2 minutes per side. Remove and set aside.
Spread 1 tablespoon of secret sauce on one side of a slice of bread. Layer with caramelized onions, a slice of cheese, a patty, and another tablespoon of secret sauce. Top with another slice of bread. Repeat with remaining ingredients.
Melt 1 teaspoon of butter in the skillet over medium heat. Cook the assembled sandwiches until the bread is golden brown and the cheese is melted, about 2-3 minutes per side.
