  • 1 box yellow cake mix (plus ingredients on the back of the box)
  • 1/2 cup powdered sugar
  • 1/4 cup flour
  • 1/4 cup butter, room temperature
  • 1 cup smooth peanut butter
  • 1/4 cup quick oats
  • 3 tbsp brown sugar
  • 1 cup mini M&M’s
  • 4 oz cream cheese, room temperature
  • 1 cup mini chocolate chips
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tsp vanilla extract
  • 6–8 cups powdered sugar
  • 2 sticks butter, room temperature
  • 1/4 cup brown sugar

Instructions

  1. Prepare Cookie Dough: Cream together the cream cheese, butter, and peanut butter. Beat in powdered sugar, brown sugar, flour, vanilla, and salt until well combined. Stir in oats, chocolate chips, and M&M’s. Scoop and roll into balls, then freeze on a baking sheet until solid.
  2. Bake Cupcakes: Preheat oven to 350°F (175°C). Prepare the cake mix as directed on the box and pour into lined muffin tins. Press a frozen cookie dough ball into the center of each cupcake. Bake for 14-16 minutes or until a toothpick inserted into the cupcake (but not the cookie dough) comes out clean. Cool completely on a wire rack.
  3. Make Frosting: Beat the butter, brown sugar, peanut butter, and vanilla extract until creamy. Gradually add powdered sugar until desired consistency is achieved. Stir in mini chocolate chips.
  4. Decorate: Pipe frosting onto each cooled cupcake, covering the cookie dough center. Sprinkle with mini M&M’s for a fun and colorful finish.
