  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/3 cup butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 4 tbsp butter
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 325°F (163°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, combine the graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix well until the crumbs are moistened. Press about 1 tablespoon of the mixture into the bottom of each muffin liner.
  3. In a large bowl, beat the softened cream cheese, granulated sugar, and 1 tsp vanilla extract until smooth and creamy. Add the eggs one at a time, beating well after each addition. Stir in the sour cream until well combined.
  4. Spoon the cheesecake filling over the prepared crusts, filling each liner almost to the top. Bake for 20-25 minutes, or until the centers are set. Let cool in the pan for about 30 minutes, then transfer to the refrigerator to cool completely.
  5. In a medium saucepan over medium heat, combine the brown sugar, heavy cream, butter, and a pinch of salt. Bring to a gentle boil, stirring constantly until the sugar is dissolved and the sauce thickens, about 5-7 minutes. Remove from heat and stir in the vanilla extract.
  6. Drizzle the cooled caramel sauce over the chilled mini cheesecakes just before serving.
