Ingredients
Scale
2 ½ cups milk
½ cup cream cheese, softened
1 Tbs. baking powder
¼ cup real maple syrup
1 pound bacon, cooked crisp and finely chopped
½ stick butter, melted
2 tsp. vanilla extract
3 cups all-purpose flour
2 eggs
¼ cup sugar
Pinch of salt
1 Tbs. white vinegar
½ tsp. salt
1 cup confectioners sugar
Real maple syrup, for serving
Instructions
Preheat your oven to 425°F (220°C).
In a large bowl, combine the flour, sugar, ½ teaspoon of salt, and baking powder. Mix well and set aside.
In a small bowl, combine the milk and vinegar. Stir and let it sit for 1 minute to curdle. Whisk in the vanilla extract, eggs, and melted butter.
Pour the wet ingredients into the dry ingredients and mix until well combined.
Grease or spray two mini muffin baking pans. Fill each cup ⅔ full with the pancake batter.
Bake for 9-12 minutes, or until the pancake bites are lightly golden brown on top.
While the pancake bites are baking, prepare the maple frosting. In a small bowl, whisk together the cream cheese, confectioners sugar, ¼ cup of maple syrup, and a pinch of salt until smooth.
Once the pancake bites are cool enough to handle, dip the tops into the maple frosting and then into the chopped bacon.
Serve the Maple, Bacon, Pancake Bites warm with additional real maple syrup for drizzling.
