  • 3 cups all-purpose flour
  • 1 cup unsalted butter, room temperature
  • 1 ½ cups granulated sugar
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 tbsp lemon zest
  • 2 tbsp fresh lemon juice
  • 1 large egg
  • ¼ cup sugar (for rolling)

Instructions

  1. In a large mixing bowl, beat together the butter, granulated sugar, and lemon zest with an electric mixer for 1-2 minutes until light and fluffy.
  2. Add the fresh lemon juice and egg to the mixture, and mix until well combined.
  3. Gradually add the all-purpose flour, baking soda, and salt. Mix by hand until the dough forms and all ingredients are well incorporated.
  4. Cover the dough and refrigerate for 30-60 minutes to make it easier to handle.
  5. Preheat your oven to 350ºF (175ºC). Line a baking sheet with parchment paper.
  6. Roll the chilled dough into balls, about 1 inch in diameter. Roll each ball in the additional sugar to coat.
  7. Place the dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake in the preheated oven for 11-13 minutes, or until the edges are set but the centers are still soft.
  9. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
