  • 1 cup unsalted butter, softened
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 teaspoon salt
  • 3/4 cup sugar
  • 2 large eggs
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 2 cups chocolate chips

Instructions

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. Cream together softened butter, brown sugar, and white sugar until smooth. Beat in eggs one at a time, then stir in vanilla extract.
  3. In a separate bowl, combine all-purpose flour, baking soda, and salt. Gradually add to the creamed mixture and mix until well combined. Stir in chocolate chips.
  4. Drop cookie dough by large spoonfuls onto prepared baking sheets. Bake for 10 minutes or until edges are golden brown. Allow cookies to cool on wire racks.
  5. In a bowl, whisk together heavy cream, milk, sugar, and vanilla extract until sugar is dissolved.
  6. Pour the mixture into an ice cream maker and churn according to manufacturer's instructions. Freeze churned ice cream until firm, about 2 hours.
  7. Place a scoop of ice cream between two cooled cookies. Press cookies together gently to spread the ice cream. Wrap each sandwich in plastic wrap and freeze until firm, about 1 hour.
