  • 1/2 cup unsalted butter

  1. Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium saucepan, combine the caster sugar, unsalted butter, and double cream.
  3. Heat the mixture over medium heat, stirring constantly until the butter melts and the sugar dissolves.
  4. Bring the mixture to a boil, continuing to stir. Once it starts boiling, stop stirring and let it cook for 5 minutes or until it reaches 234°F (112°C) on a candy thermometer.
  5. Remove the saucepan from the heat and let it cool slightly.
  6. Divide the mixture into separate bowls and add different food coloring to each to create your galaxy colors. Swirl the colors together slightly but do not fully mix.
  7. Pour the colored fudge mixture into the prepared pan, using a spatula to create swirls and patterns.
  8. Add sprinkles or edible glitter on top for a cosmic effect.
  9. Let the fudge cool at room temperature for about 2 hours, then refrigerate for an additional hour to set completely.
  10. Once set, lift the fudge out of the pan using the parchment paper overhang. Cut into squares and enjoy!
