  • 4 large boneless skinless chicken breasts
  • 2 cups flour
  • 4 teaspoons salt
  • 4 teaspoons black pepper
  • 1 tablespoon freshly ground nutmeg
  • 3 tablespoons ground ginger
  • 2 teaspoons ground sage
  • 2 teaspoons ground thyme
  • 1 teaspoon cayenne pepper
  • 2 tablespoons paprika
  • 4 eggs
  • 8 tablespoons water
  • 1 cup honey
  • ¼ cup soy sauce (low sodium preferred)
  • 34 cloves garlic, minced
  • 2 tablespoons olive oil
  • Canola oil for frying

Instructions

  1. Flatten each chicken breast to ½ inch thickness between plastic wrap.
  2. Sift together the flour, salt, pepper, paprika, cayenne pepper, ground ginger, nutmeg, thyme, sage, and half of the flour mixture. Set aside.
  3. In a bowl, whisk together the eggs and water.
  4. Season the chicken breasts with salt and pepper. Dip each breast into the flour mixture, then into the egg wash, and back into the flour mixture.
  5. Heat canola oil in a large skillet over medium heat. Fry the chicken breasts for 4-5 minutes per side, or until crispy and golden brown.
  6. In another skillet, heat olive oil over medium heat. Cook the minced garlic until fragrant, then add honey and soy sauce. Simmer for a few minutes until slightly thickened.
  7. Drizzle the honey garlic sauce over the fried chicken breasts.
