  • 1 package (10 oz) frozen chopped spinach, thawed and drained
  • 1/2 cup sour cream
  • 1 small onion, finely chopped
  • 1 tbsp olive oil
  • 8 oz cream cheese, softened
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1 cup shredded mozzarella cheese
  • 3 cloves garlic, minced
  • 1/4 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes for a bit of heat

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat olive oil in a large skillet over medium heat. Add finely chopped onions and cook until translucent, about 5 minutes. Stir in minced garlic and cook for an additional 1-2 minutes until fragrant.
  3. Add thawed spinach and chopped artichoke hearts to the skillet. Cook for 2-3 minutes, stirring occasionally, until heated through.
  4. In a large bowl, mix softened cream cheese, sour cream, and mayonnaise until smooth. Stir in shredded mozzarella and grated Parmesan cheese.
  5. Mix the spinach and artichoke mixture into the cheese mixture. Season with salt, pepper, and optional crushed red pepper flakes. Stir until well combined.
  6. Transfer the mixture to an oven-safe dish. Spread evenly. Sprinkle extra shredded mozzarella on top if desired. Bake for 20-25 minutes, or until the top is bubbly and golden brown.
  7. Allow to cool slightly before serving.
