200g milk chocolate, chopped
100g dark chocolate, chopped
500g soft cheese
3 large eggs, at room temperature
200g golden caster sugar
200ml soured cream
3 tbsp plain flour
1 tsp vanilla paste
225g light brown soft sugar
225g golden caster sugar
250g salted butter, softened
2 egg yolks
2 tbsp vanilla paste
3 tbsp milk
225g plain flour
225g self-raising flour
200g dark chocolate chips
100g dark chocolate, chopped
100g milk chocolate, chopped
300ml double cream
2 tbsp caster sugar
Sunflower or vegetable oil, for the tin
Instructions
Preheat the oven and lightly oil the baking tin. Melt the milk and dark chocolate, then set aside to cool slightly.
In a large bowl, beat together soft cheese, eggs, and golden caster sugar until smooth. Mix in soured cream, plain flour, and vanilla paste until well combined.
Pour the cheesecake mixture into the prepared tin and bake according to instructions until set. Allow to cool completely.
Cream together light brown sugar, golden caster sugar, and softened butter until smooth. Mix in egg yolks, vanilla paste, and milk. Gradually add plain and self-raising flours, then fold in dark chocolate chips and chopped chocolates.
Once the cheesecake has cooled, spread the cookie dough evenly over the top.
Whip double cream with caster sugar until stiff peaks form. Spread over the cookie dough layer. Decorate with chocolate mini eggs, chocolate nests, and white chocolate buttons as desired.
