  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 ½ cups granulated sugar
  • 2 tablespoons powdered sugar (for dusting)
  • 2 ¾ cups all-purpose flour
  • ¼ cup granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon
  • ½ teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1 egg

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper or silicone baking mats.
  2. In a medium bowl, whisk together the flour, baking soda, and baking powder. Set aside.
  3. In a large bowl, cream together the softened butter and 1 ½ cups granulated sugar until light and fluffy. Beat in the egg and vanilla extract until well combined.
  4. Gradually blend in the dry ingredients until the dough is well incorporated.
  5. In a small bowl, mix the ground cinnamon with the ¼ cup granulated sugar. Roll dough into 1-inch balls and coat each ball in the cinnamon-sugar mixture.
  6. Place the coated dough balls 2 inches apart on the prepared baking sheets and flatten each ball slightly with the bottom of a glass. Bake for 8 to 10 minutes or until lightly browned.
  7. Allow cookies to cool on the baking sheets for 2 minutes before transferring to wire racks to cool completely. Dust with powdered sugar before serving.
