Ingredients
Scale
17.5 oz sugar cookie mix
½ cup butter, softened
2 tablespoons unbleached flour
8 oz cream cheese, softened
¼ cup granulated sugar
1 teaspoon pure vanilla extract
1 cup cherry pie filling
½ cup graham cracker crumbs
1 tablespoon light brown sugar
Instructions
Preheat oven to 350°F. Line a cookie sheet with parchment paper. Prepare sugar cookie mix according to package directions. Blend in 2 tablespoons of flour until dough is soft and crumbly. Refrigerate for 15-20 minutes.
In a mixing bowl, combine softened cream cheese, granulated sugar, and vanilla extract. Mix until smooth. Transfer to a zipper bag or piping bag with a small tip.
Mix graham cracker crumbs and light brown sugar in a bowl.
Shape chilled cookie dough into 2-tablespoon-sized balls, placing them 2 inches apart on the prepared cookie sheet. Use a teaspoon to create a small indentation in the center of each cookie. Pipe or spoon a teaspoon of cream cheese filling into each indentation. Top with three cherries or 2 teaspoons of cherry pie filling on each cookie.
Bake for 15-17 minutes until edges are golden brown and centers are set. Cool on baking sheet for 10 minutes before transferring to a cooling rack.
