  • 1 cup pecan halves, toasted and coarsely chopped
  • ½ cup heavy whipping cream
  • ½ cup butter
  • ½ cup packed brown sugar
  • ½ cup sugar
  • 2 cups confectioners’ sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt

Instructions

  1. In a large heavy saucepan, mix together the butter, sugars, heavy whipping cream, and salt.
  2. Heat over medium heat, bringing the mixture to a boil. Stir occasionally. Once boiling, cook for 5 minutes, stirring constantly to prevent burning.
  3. Remove the saucepan from the heat. Stir in the vanilla extract. Gradually mix in the confectioners’ sugar until smooth and well blended.
  4. Fold in the chopped pecans until evenly distributed.
  5. Spread the mixture into a buttered 8-inch square dish, smoothing the top with a spatula.
  6. Allow the fudge to cool to room temperature. Once set, cut into 1-inch squares.
  7. Transfer the fudge to an airtight container and store in the refrigerator.
