3/4 cup rice flour
2 tablespoons hot water
1/4 cup brown sugar
1 cup water (for syrup)
1/2 cup brown sugar (for syrup)
1 cup whole milk
2 cups heavy cream
1 tablespoon vanilla extract
1/2 cup granulated sugar
Instructions
In a bowl, mix rice flour and brown sugar. Gradually stir in hot water until a dough forms. Roll the dough into small balls. Boil the boba balls in water for 2-3 minutes. Drain and set aside.
In a saucepan, combine water and brown sugar. Bring to a boil, stirring frequently until it thickens into a syrup. Add the cooked boba balls to the syrup and let them coat thoroughly.
Whisk together the heavy cream, milk, granulated sugar, and vanilla extract until fully combined.
Place a few boba balls in each popsicle mold. Pour the ice cream mixture over the boba balls. Insert sticks into the molds and freeze for at least 4 hours or until solid.
