½ cup unsalted butter, melted
2 cups vanilla wafer crumbs
16 ounces cream cheese, at room temperature
1 cup mashed banana (roughly 2 bananas)
¼ cup granulated white sugar
2 large eggs
1 teaspoon vanilla extract
3.4 ounces banana cream pudding mix
1 cup marshmallow fluff
Whipped cream
Banana slices
Mini or regular-sized vanilla cookies
Instructions
Preheat the oven to 350°F (175°C) and line the bottom of a 9×9 baking dish with parchment paper. In a medium bowl, mix melted butter with vanilla wafer crumbs. Press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes and set aside.
In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs and vanilla extract, mixing until well combined. Incorporate the marshmallow fluff, then stir in the banana cream pudding mix and mashed banana. Pour the filling over the baked crust.
Bake for 20 minutes, then reduce the temperature to 200°F (93°C) and bake for an additional 30 minutes. Turn off the oven and let the cheesecake cool inside for 10 minutes. Remove and let cool to room temperature, then refrigerate for at least 3 hours.
Cut into 16 squares and top each with whipped cream, a banana slice, and a vanilla cookie.
